Crystal Muffin

To honor our latest creation, the WELLNESS protein, our dear Elise has taken out of her oven some blue-lagoon muffins. These muffins are packed with minerals from coconut water, and antioxidants present in quantity in spirulina phycocyanin and blueberries. We further intensify the benefits for the body thanks to the presence of hemp, this superfood rich in nutrients and highly assimilable protein. Ideal as a snack after a workout or for breakfast to start everything off healthy.

INGREDIENTS (for 6 muffins)

  • 75g coconut flour
  • 25gr of WELLNESS protein
  • 15cl of coconut milk
  • 3 tbsp ground flax seeds + 6 tbsp water (to replace the egg)
  • 2 tbsp coconut sugar
  • 1 tsp baking soda
  • 100g blueberries

STEPS

  1. In a container, mix the flax seeds with the water and let stand for 20 minutes.
  2. In a second bowl, mix the dry ingredients
  3. Once the 20 minutes have passed, add the milk and mix. Then gradually incorporate the mixture of dry ingredients, then add the blueberries.
  4. Place in ramekins then bake for 15 min at 180°C (fan-assisted)
